Fresh Spicy Fish Curry

Fresh Spicy Fish Curry
INGREDIENTS
Fresh 650 grams fish fillets
Fresh 3 onions, sliced
Finely chopped 1 red Thai Chili
1 teaspoon fresh ginger, grated
3 tablespoons oil
Fresh 4 cloves garlic, crushed
1/2 tablespoons cumin
1/2 tablespoons paprika
1 teaspoon turmeric
300 grams of whole tomatoes
1/2 cup coconut cream
salt to taste
6 tablespoons Fresh cilantro, chopped
2 tablespoons Fresh mint, chopped


COOKING INSTRUCTIONS
Heat the oil in a wok, add onion, garlic, ginger, chilli and spices and cook until onion is soft.

Add crushed tomatoes and bring to a boil.

Reduce heat, and simmer until sauce thickens.

Add fish and coconut cream, bring to a boil.

Reduce heat, and simmer until the fish is cooked

Stir in cilantro and mint.

Serve with boiled rice
